4 cups
shredded zucchini, drained and pressed dry
3 cups cooked rice
1 1/2 cups mozzarella cheese
1 cup grated Parmesan cheese
2 large eggs
1 pound lean ground beef
1/2 cup chopped onion
1 1/2 cups spaghetti sauce
1 teaspoon oregano
1/2 teaspoon salt
2 cups shredded Cheddar cheese
Directions:
Combine
shredded zucchini, cooked rice, Mozzarella cheese, Parmesan
cheese, and eggs. Press into greased jellyroll pan. Bake at
400 degrees for 20-25 minutes until set and lightly browned.
Meanwhile, brown ground beef with onion. Combine with spaghetti
sauce, oregano and salt. Pour over crust. Sprinkle with shredded
Cheddar cheese. Bake at 400 degrees for 15 minutes. Let stand
5 minutes before cutting and serving.
