cups brown sugar
1/2 cup vegetable oil
1 large egg
2 teaspoons salt
2 1/2 cups enriched flour
1/2 cup milk plus 1 teaspoon vinegar
2 teaspoons vanilla
1 1/2 cups rhubarb
1/2 teaspoon ground cinnamon
Directions:
In
large bowl, mix brown sugar, vegetable oil, and egg. In a separate
bowl, combine salt and flour; add alternately with milk/vinegar.
Add vanilla and rhubarb; mix well. Fill muffin tins three-quarters
full with the batter. Sprinkle ground cinnamon over top of the
muffins. Bake at 350 degrees for 20-25 minutes.
