Reduced Fat Beef & Salsa Burritos - Yield: 10 Servings

Ingredients:

1 1/4 lbs lean ground beef
1 1/2 tbps chili powder
1/2 tsp ground cumin
1/2 tsp salt
1 /4 tsp pepper
10 oz frozen chopped spinach -- thawed and well drained
1 1/4 cups prepared chunky salsa
1 cup shredded cheddar cheese-- low fat
10 medium flour tortillas; lowfat -- warmed

Directions:

In large non-stick skillet, brown ground beef over medium heat 10 to 12 minutes or until no longer pink, stirring occasionally. Pour off drippings. Season beef with chili powder, cumin, salt and pepper. Stir in spinach and salsa; heat through. Remove from heat; stir in cheese.

Spoon 1/2 cup beef mixture in center of each tortilla. Fold bottom edge up over filling; fold sides to center, overlapping edges. Yields 10 servings.
