Melt
half a tablespoon of margarine in a frying pan. Put one flour
tortilla in the pan, sprinkle about half a cup of grated cheese
over one half of tortilla, and fry for about 1 minute, until
cheese melts but before tortilla gets crisp. Fold over other
half. Put on plate to keep warm and repeat, adding butter to
pan as needed.
Spoon salsa over top, if desired
Quesadillas can also be made open-faced in a toaster-oven, but
they have to be watched carefully so they don't get too crisp.
Melon, grapes or oranges finish off the meal. Or mix fruit salad
with flavored yogurt and it doubles as dessert.
