Quick and Easy Nachos

 
Ingredients:

1 lb. Light ground turkey
1 pkg. (1.25 oz.) taco seasoning mix
1 can tomato soup
1 1/2 cups water
1 1/2 cups uncooked brown rice
Chunky Salsa
Recduced fat Shredded cheese
Lettuce
Tomatoes, diced
Low-fat Tortilla chips (or soft taco shells)

Directions:

1- Cook ground turkey and taco seasoning in skillet until browned, stirring often. Pour off any fat.
2- Add soup, water and rice. Heat to a boil.
3- Cover and cook over 5 min. on low heat or until done.
4- Top with salsa, cheese, lettuce, and tomato.
5- Serve with tortilla chips for dipping or use as filling for soft tacos.
