Pineapple Loaf Cake

Ingredients:

1/2 cup reduced fat margarine
1 1/2 cups white sugar
1/2 tsp. vanilla extract
1 cup crushed pineapple undrained
2 1/2 cups cake flour
1 tbsp. baking powder
pinch of salt
1/4 cup water
3 egg whites beaten until stiff

Directions:
Cream margarine with sugar and vanilla until fluffy. Add pineapple.
Sift dry ingredients together, add to creamed mixture alternately with water. Fold in egg whites, pour into a greased and floured loaf pan. Bake at 350 degrees for about 1 hour, or until done. Glaze with a powdered sugar glaze, if desired.
