Grischke's Granola


Prep time: 15 minutes
Baking Time: 30 minutes

Ingredients:

4 cups old-fashioned oats
1/2 cup sliced almonds or chopped pecans
1/2 cup packed light brown sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup canola oil

1/4 cup honey or maple syrup
1 teaspoon vanilla
1 cup raisins or dried cherries or dried blueberries

Directions:

Preheat oven to 300. In a bowl, mix the first five ingredients together. Set aside. In a saucepan, warm the oil and honey. Whisk in the vanilla. Pour the liquid mexture into the oat mixture. Stir ingredients together with a wooden spoon. Spread granola in a 15x10x1 inch baking pan. Bake 30 minutes, stirring carefully every 10 minutes. Cool completely and stir in dried fruit. Store in an airtight container or plastic bag for up to 1 week at room temperature or up to 3 months in the freezer.
