Cornflake Chicken or Fish


Preparation time: 35 minutes for fish; 55 minutes for chicken
Yield: 4 3-ounce servings


Ingredients:

2 egg whites, whipped
1 1/2 cups evaporated skim milk
1 teaspoon poultry seasoning
3 cups crushed cornflakes
1 pound chicken pieces, skinned, or 1 pound frozen fish fillets

Directions:

Preheat oven to 400 degrees F. Combine egg whites, milk, and seasoning in a mixing bowl. Whip for 2 minutes. Meanwhile, crush cornflakes in a plastic bag. Dip chicken or fish in milk, then shake in cornflakes and place on a baking sheet. For chicken, bake for 35 to 45 minutes. For fish, reduce time to 15 to 20 minutes.
