Black Bean and Cheese Nachos


Preparation time: 30 minutes
Yield: 8 servings – 6-8 nachos each


Ingredients:

16-ounce can black beans in sauce
1 teaspoon chili powder
1/2 teaspoon cumin
2 green onions, diced
1/3 cup medium-hot thick and chunky salsa
4 cups baked tortilla chips (such as Highland Northern Lights)
4 ounces reduced-fat Monterey Jack cheese, grated

Directions:

Preheat oven to 400 degrees F. In a medium skillet, combine beans in sauce, chili powder, cumin, green onions, and salsa. Cook uncovered over medium heat for 10 minutes. Meanwhile, spread baked tortilla chips out on a large baking sheet. Spoon a small amount of bean mixture on each tortilla chip, then sprinkle cheese on top of beans. Bake for 15 minutes. Pass additional salsa as needed.
